Recipe: Big Danky Thang
First of homebrewer's two recipes to debut at Poway's Lightning Brewery tomorrow
As part of our second-annual Homebrew Summer program, various San Diego County breweries have teamed with amateur brewers to produce their homespun recipes on their commercial systems, then tap the resultant beers in their tasting rooms. On top of that, the homebrewers involved are sharing their recipes so you can recreate them from the comfort of home.
Today’s homebrewer-to-homebrewer contribution comes from John Bell III, who had a pair of recipes for companion beers selected by two nearby inland North County breweries. The first is a double IPA called Big Danky Thang, which Bell brewed at Poway nanobrewery, Lighting Brewery. That beer will debut this Saturday, June 25, with $5 pints of the beer available from 1 to 5 p.m. along with complimentary snacks while supplies last.

This beer was inspired by my wife’s taste buds as she leans towards danky West Coast IPAs, while liking the fruity hazies. She really enjoys Modern Times‘ Nelson and I had been using Strata hops for a while, so I combined these two hop favorites into my base double IPA recipe. This DIPA malt backbone is able to support the of higher IBUs nicely. Nelson and Strata provide the bitterness while providing plenty of ‘dankness’. This beer incorporates some hazy IPA hopping techniques to add lots of hop flavor and aromas without creating a hop burn.”

I hadn’t made a new IPA in a while and felt that John’s use of a classic set of IPA ingredients was interesting. He further exploited the brewing and fermentation processes in a way that extracts a lot of hop flavor without as much hop bitterness as is usually seen in more widely known over the top San Diego-produced West Coast IPAs.”
