
It’s a common query: Why is San Diego such a hotbed for craft beer? There are numerous answers, but one of the biggest reasons is the mid-’90s establishment of yeast-production business, White Labs, which furnished the county’s earliest entrants into the brewing industry with healthy strains with which to ferment their beers. In addition to being a top-notch supplier, the Miramar business also has its own on-site brewery, which split-batches beers and ferments each creation with two divergent types of yeast to show what a significant difference that key ingredient makes in a finished product.
