Russian River STS Pils | Unfiltered Pilsner (5.3%): What a difference two and a half years make! Prior to then, STS Pils had only been available in 510 milliliter bottles, but the transition to six-packs of 12-ounce cans has supercharged its uptake among the general public. Named for the Santa Rosa three-letter airport code ‒ itself named after the immortal Peanuts creator Charles Schulz ‒ this beer tastes amazing while waiting for a flight in the tiny terminal there. A dry-hopped German Pilsner recipe with a mineral tinge and firm bitterness.

Firestone Walker Pivo Pils | Dry-hopped Pilsner (5.3%): Firestone Walker Brewing has been in the news an awful lot recently, having acquired in short order Trumer from Berkeley (but also Austria) and San Diego’s very own Stone Brewing. None of this should make a dent in the forward momentum with Pivo, one of the more iconic dry-hopped Pilsners of our age. Despite the Slavic origins of the name (“Pivo” simply means “beer” in every single Slavonic tongue), this beer was at least in part inspired by Tipo Pils from Birrificio Italiano in northern Italy.

Russian River / Firestone Walker STiVO Pils | Kellserpils (5.3%): The catalyst for this particular set of picks! STiVO is a mashup of the above two recipes, with the best elements of each. Soft, welcoming Pilsner malt with a judicious amount of dry-hopping makes for one of the best lagers in the shop at the moment. Bottles have been selling like hotcakes since their arrival. At the time of writing, we just tapped a very rare keg of this beer at Bottlecraft North Park, so swing on by and try it for yourself!
