Recipe: Danky Lil’ Thang
Second Chance Beer Co. to tap a SIPA from a two-time homebrew summer winner
As part of our second-annual Homebrew Summer program, various San Diego County breweries have teamed with amateur brewers to produce their homespun recipes on their commercial systems, then tap the resultant beers in their tasting rooms. On top of that, the homebrewers involved are sharing their recipes so you can recreate them from the comfort of home.
Today’s homebrewer-to-homebrewer contribution is the second from John Bell III, whose recipe for a session IPA called Danky Lil’ Thang will tap at Second Chance Beer Co. in Carmel Mountain Ranch on Thursday, June 30. It’s a lower-alcohol companion beer to his double IPA Big Danky Thang, which tapped at Lightning Brewery in Poway over the weekend.
Check back to San Diego Beer News throughout the summer for more recipes as well as release dates for other pro-am beers. It’s going to be a great summer for homebrewers and beer fans alike, and we want you to be a part of it!
John wrote a great recipe, which made picking this beer an easy choice! We love the modern IPA style and techniques. As we work to transition our IPAs into the future, this was a stellar chance to experiment on the system. Although this was a straightforward brew day, adding a bio-transformation dry-hop with our yeast pitch was a first for Second Chance! Thanks for guiding us, John!”

The inspiration for this beer was from enjoying Gravity Heights “Business Lunch” and AleSmith’s “Kick Back Relax”, which are both session IPAs. Also, with summer approaching, I wanted a summer session IPA, so I scaled down this recipe from my double IPA, Big Danky Thang. This beer is a easy-drinking session IPA with plenty of dank flavors from CTZ, Nelson and Strata hops. It incorporates some hazy IPA hopping techniques to add lots of hop flavor and aromas without creating a hop bomb.”
