Recipe: Açai Bowl

South O Brewing teams with YouTube homebrew host for a fruited American wheat

As part of our second-annual Homebrew Summer program, various San Diego County breweries have teamed with amateur brewers to produce their homespun recipes on their commercial systems, then tap the resultant beers in their tasting rooms. On top of that, the homebrewers involved are sharing their recipes so you can recreate them from the comfort of home.

Today’s homebrewer-to-homebrewer contribution comes from Trent Musho, the mind and voice behind YouTube’s The BruSho. The team at Oceanside’s South O Brewing reached out to Musho to collaborate on a beer, landing on this recipe for a fruited American wheat ale. Dubbed Açai Bowl, it contains its namesake antioxidant-rich berry and a hop varietal with berry-like aromas. That beer is currently on-tap at South O and is ideally suited to help close out a holiday weekend.

Check back to San Diego Beer News throughout the summer for more recipes as well as release dates for other pro-am beers. It’s going to be a great summer for homebrewers and beer fans alike, and we want you to be a part of it!

This is an American wheat beer fruited with açaí berries and hopped with Mosaic to add to the berry aroma. The beer is a clear, bright red with a nice white foamy head. It’s also refreshing and delicious; fruity and slightly tart. Its the perfect wheat beer for a hot summers day. We made it with local Homebrewer Trent Musho. Maurey Fletcher, Head Brewer, South O Brewing

Homebrewing has been a passion of mine for about 10 years, and like many homebrewers, I often daydream about brewing professionally. So when [South O co-founders] Trevor Whitehead and Joel Steinmetz reached out to me to collaborate on a beer for Homebrew Summer I was ecstatic about the opportunity! My mind began to swirl with ideas, but I kept coming back to something refreshing and easy-drinking for the summer heat. And, to me, no beer does that more than a fruited wheat ale. So when I met with South O Head Brewer, Maurey, and told him my initial thoughts, I saw his eyes light up and he got really excited, too. We talked about the base recipe and then he mentioned he had some açai puree that he was waiting on the right recipe for. I was sold immediately. I love a good açai bowl and I had never had that in a beer. To me, açai flavor is very reminiscent of blueberries, so when it came time for deciding hops we both agreed on using Mosiac. Mosiac always gives me a blueberry flavor and aroma, and we thought it would marry beautifully with the açai. The brew day was a ton of fun and it was super-interesting to see the similarities and differences between pro brewing and home brewing. And best of all, the beer turned out fantastic. I look forward to others getting to try this delicious thirst-quencher!”
