East Village Brewing's founders throw malty beer lovers a bone, sharing the recipe for their sessionable Scottish-style export ale

When Aaron Justus and Brandon Green traded in high-level brewing positions at Ballast Point Brewing to build their own little piece of craft-beer heaven in the East Village, they did so, in part, to brew what they wanted when and how they wanted. Over the past two years, that’s just what they’ve done. Their passion project, East Village Brewing, features one of the more diverse tap lists in the county, thanks in part to the inclusion of malt-forward beer styles from around the world. Sadly, those amber-to-onyx beauties can be hard to come-by in San Diego, so Justus and Green felt it would be beneficial to share the recipe for their Scottish-style export ale, Skyline. Why did you choose to share this recipe and do you have any tips for homebrewers?
Brandon and I are particularly fond of sessionable dark beers. The key to a great Scottish export ale is balance; it needs to be thirst-quenching. The malt bill and long boil ensure this beer will feature deep caramel and toasted pecan notes, but the sweetness is countered with a fairly cool mash and a yeast strain that attenuates exceptionally well. This results in a beer that is full-flavored with a crisp and relatively dry finish.
