Homebrew Summer: Scottish Fold

When looking for a brewing partner for this year’s edition of Homebrew Summer, Daniel Guy didn’t even have to leave his brewery. The individual he selected, Damon Adamo, has been a regular visitor to Guy’s Arcana Brewing for years. Together, they applied a few tweaks to Adamo’s recipe for a Scottish-style export ale, and now that beer, Scottish Fold, is on tap at Arcana’s tasting room. Not only that, but the recipe for that complex, malt-forward brew is available for you to download in all-grain and extract formats below. Happy drinking and/or homebrewing!

Deciding to work with Damon on our Homebrew Summer recipe was easy! Beyond sharing some tasty homebrew over the years, we’ve also talked brewing technique and recipe development at the bar for ages. Brewing a Scottish export ale is been both a fun way to showcase his taste in beer and present a rich, malty beer style we don’t see nearly enough of on tap. Damon has been a part of the craft-beer scene for a few years, mainly in production and packaging, so it’s great to also see him on the brew side.

I enjoyed working with Dan. We discussed changes to the original recipe to make this a true collaboration. His experience and knowledge of grains helped with creating the final recipe. Brewing a Scottish export, we decided to use Golden Promise over a U.K. pale malt, and replaced roasted barley with pale chocolate malt for color without the roastiness. I recently went to Scotland and thought a Scottish beer would be great for a collaboration like this.
