Even before the pandemic struck and changed service conditions for local breweries, El Cajon’s Burning Beard Brewing was working on establishing an on-site culinary component. So, rather than team up with a mobile food vendor to offer what the State of California deems a “bona fide meal,” they are taking food service on in a lasting way and hope to open Punkspeare’s Brasserie before the summer is out.
“In true Beard fashion, we’re taking an adapted MacGyver approach to this project, proverbial paper clips, chewing gum and all,” says co-founder Mike Maass. “Punkspeare’s is housed in a retrofitted, circa-late-1960’s trailer located in front of our brewery and adjacent to our new Beardgarten.”
The Beardgarten used to simply go by the label of “parking lot,” but with the expanded service rules enacted in light of the pandemic, it is now a canopy-shaded spot for patrons to consume Burning Beard beers and, soon, offerings from the Punkspeare’s trailer, which is equipped with all the hardware and equipment to comply with state and local health and culinary codes. Manning the brasserie on wheels is Executive Chef Carlos Gutierrez, who has worked at beer-focused eateries including Blind Lady Ale House, Gravity Heights and the Alpine Beer Co. Pub.
Punkspeare’s menu is built around burgers but will also service workers in and near its commercial and industrial environs with quick-serve breakfasts and a variety of espresso drinks. The initial list of burger options will be straightforward (standard, cheese, deluxe), relying on high-quality beef and accoutrements to make them stand out. Once they hit their stride, Maass says they’ll get more experimental. Sides of fries and a pair of salads (garden, Caesar) round out the opening-day bill of fare.
“Our goal is to offer a select number of top-quality flagship menu items, supplemented by rotating specials and other delectable surprises,” says Maass. Another goal is for the company’s beer-education-geared staff to help patrons discover exceptional beer-and-food pairings when they order both in the tasting room. Food may also be ordered directly from the trailer.
Burning Beard hopes to debut Punkspeare’s ahead of Labor Day weekend. They say their rig is ready to go. It’s just a matter of getting final approval from the powers that be. For now, Maass is happy to have been able to convert his company’s parking lot to help generate revenue now and in the future.
“The whole coronavirus thing created an opportunity for us to build a brand-new outdoor beering and dining space. With plenty of shade and seating,” he says. “The Beardgarten has allowed us to remain open for onsite beer enjoyment and will continue to play a key role in our operation going forward.”
