Recipes: India Pale Whale & Toast of Croydon

Landing Harland Brewing's whale of an IPA and Home Brew Mart's juicy pale ale

As part of our San Diego Homebrew Summer program, every Monday between now and the end of August, San Diego Beer News will publish homebrew-scaled recipes for beers professionally produced by craft breweries throughout the county. This week, Scripps Ranch-based Harland Brewing is contributing the recipe for a West Coast IPA that is a favorite of fans and brewers alike; a shift beer that’s refreshing yet highly flavorful. It goes by the clever name India Pale Whale and incorporates some choice hops, as does a crisp, juicy pale ale from Linda Vista’s Home Brew Mart, which goes by the name Toast of Croydon and is built on deception and Mandarina Bavaria hops. Scroll down for the stories behind these beers as well as recipes from the source.

India Pale Whale IPA

Q&A with Harland Brewing Head Brewer Ryan Alvarez

Why did you decide to share this particular recipe?

We decided to share our India Pale Whale because at Harland, Pale Whale is easily our favorite beer to drink as a shift beer.

Please share a memory from your homebrewing days?

One of my favorite memories from homebrewing would have to be after my uncle passed away, he had built me a whole brew stand and all this storage to help me stay organized. He supported me brewing and loved to help me build out my home brewery. I decided to brew a stout to celebrate his life and then cellar it and open a bottle every year on his birthday to celebrate him and his life. I still have a few bottles to this day.

How did homebrewing lead you to want to make brewing your career?

I was only homebrewing for a short time before I started keg-washing at Green Flash Brewing. As soon as I got my taste of working at a professional brewery I knew I wanted to be a brewer.

Toast of Croydon Pale Ale

A summary from Home Brew Mart Assistant Manager Derek Lauridsen

In a not-so-subtle nod to a favorite movie universe, this recipe was intended to create something whose appearance belies its actual taste. Using 45% wheat and Mandarina Bavaria hops, this crisp and juicy ale should be a surprise to any who taste it.

San Diego Homebrew Summer is brought to you by our partners at Ballast Point Brewing, and you can find all of the ingredients to make this pair of beers at Home Brew Mart.
