Homebrew Summer: Turnstable

We're extending Homebrew Summer into fall, marching on with a passionfruit-infused monastic-style beer from Hopnonymous Brewing

Yes, summer officially ended on September 22, but we’re happy to say that our annual Homebrew Summer program is still going strong thanks to the generosity of time, energy and spirit displayed by San Diego County breweries. For the fourth straight year, we’ve had so much participation that we need to go a few weeks into the fall to share the recipes for all of the pro-am beers that were produced in collaboration with local homebrewers. Today’s is Turnstable, a session-strength Belgian-style singel conceived by amateur Jason Clark and Hopnonymous Brewing Head Brewer Hunter Mannix. In developing this tip of the cap to monastic brewers, they decided to flip that headgear on its…well, head…using passionfruit to up the fruitiness and add some acidity. When I reached out to Jason about the collaboration, he told me that he wanted to make something hoppy. Jason asked about a Belgian ale, and I had been wanting to make a table beer for the longest time. We decided on a yeast strain with a stronger ester profile to complement the passionfruit that we would add to the beer. During the brew day, Jason told me about the vinyl scores he had made the day before. When we got to talking about names for the beer, we decided to stay with the pun names we use here at Hopnonymous, and decided on Turnstable.

Any tips for homebrewers using this recipe?
Depending on the amount of esters you would like in your beer, you can either free rise or do a controlled fermentation. And when mashing in, be careful to add the chit and rye malt toward the end to avoid a sticky mash. Lastly, a little bit of rice hulls goes a long way!
