Homebrew Summer: Chilly Nelson
In recreating their Nelson-hopped cold IPA from the comfort of home, Bay City Brewing's crew encourages you to play with your hops

In addition to a roster of fun pro-am beers being tapped at San Diego County breweries, our Homebrew Summer will include the sharing of recipes for popular beers from local brewing companies, which have been scaled down for use by amateur brewers. The first of those five-gallon instructional hand-me-downs comes from Bay City Brewing Head Brewer Austin Pinder, who’s sharing the recipe for their cold IPA, Chilly Nelson. A celebration of New Zealand’s celebrated Nelson Sauvin hop, it’s a fan-favorite beer at Bay City’s Point Loma and East Village locations. Perhaps it will be just as popular at your house. There’s only one way to find out!

We chose to share this recipe, because Chilly Nelson a brewery favorite. If the brew team is crushing beers after work, we’re usually starting off with one of these. Also, it’s a beer we’ve tinkered with a lot. We wanted to make sure it had all the punch you’d expect from a Nelson IPA, but with a nice rounded hop flavor and a super crushable profile. We love where the beer is at now, but maybe we’ll keep tinkering with it to see if we can refine it even further.
Any tips for homebrewers using this recipe?
On brew day, make sure to use the “hop dip” method for the Citra Incognito. This is the best way to get all that delicious hop goodness straight into the mix. You’ll probably end up doing a little extra cleaning and scrubbing once the beer is done since the hop oil is pretty thick and will stick to everything, but trust us, it’s worth it. We recommend keeping all the Nelson additions to the cold side, but feel free to play around with the supporting hops on brew day. There’s lots of fun stuff to pair with Nelson.
