Last Saturday, Bottlecraft North Park played host to a worldwide Phase Three Brewing event, celebrating that Illinois brewery’s flagship Citra-hopped hazy IPA, Pixel. As part and parcel, we debuted three collaborative beers from celebrated breweries around the world: Omnipollo from Sweden, Trillium Brewing from Boston and North Park Beer Co. from right across the street! We were honored to be one of just three places in California taking part. Stop on by to taste or take home one or all of the following:
Phase Three / Trillium Pixel Point | Hazy IPA (7%): An unabashed love letter to the Citra varietal, this collaboration with the renowned Boston operation, Trillium, is a mashup of sorts of two core beers. The base recipe of Pixel by Phase Three is 100% Citra-hopped, while Fort Point by Trillium combines Citra with classic Pacific Northwest stalwart Columbus. Pixel Point is a blend of Citra from both breweries, with Trillium’s lot being hand-selected. This version is the most austere on the malt front, turning the volume up on Citra!
Phase Three / Omnipollo Pixel Fata | Hazy IPA (7.2%): The extraordinary Henok Fentie is the mastermind behind the beer at Stockholm’s Omnipollo. His business partner, Karl Grandin, creates the eye-catching art festooning the labels, instantly recognizable at a glance. Lending two syllables to this collaborative hazy IPA is Omnipollo’s Fatamorgana, named for a confounding sort of mirage in which a distant object appears to split into multiple layers. And well it may be, for this beer has untold depths to explore! Hopped with Citra and Nelson Sauvin, this iteration has that familiar gooseberry tone from the latter varietal. Those who enjoy The Pupil by Societe Brewing as well as hazy IPAs will surely be fans!
Phase Three / North Park Beer Co. Art is Pixel | Hazy IPA (7%): Easily the densest and most opaque of the lineup, Art is Pixel takes a page from NPBC flagship Art is Hard, the beer one can always find on draft at Panama 66 in Balboa Park (hint: affixed to the San Diego Museum of Art). With the most complex hop-bill of them all, this beer will reward patient drinkers. Citra, Simcoe and my personal favorite New Zealand varietal, Motueka can all be found in the mix. Cheers to Phase Three and all of their partner breweries!
