Ten-75 Brewing bursts onto scene

San Marcos nanobrewery’s sudden opening coincides with the city’s Harvest Fest

With little more than a day’s notice delivered via a company Instagram account with less than 200 followers, Ten-75 Brewing threw open its doors over the weekend, welcoming in those social-media fans as well as attendees of the Sunday’s annual San Marcos Harvest Fest.

The new beer-making interest was situated smack dab in the middle of the event, which took place along Via Vera Cruz between San Marcos Boulevard and Grand Avenue. It’s fitting considering how key location is for the business, which leads with the call-to-action: “address your need for a craft beer”. That’s more than good advice. It’s a nod to the business’ name, which references its address, 1075 Linda Vista Drive.

Ten-75 is the product of brothers Jeff and Ryan Talbert (pictured below), who learned to brew on a commercial scale under the tutelage of a cousin at Douglas, Michigan’s Saugatuck Brewing. Following that education, they spent years brewing together on an amateur level, fine-tuning recipes that are now on tap at their two-barrel operation. That system was installed after the duo moved on from plans to open a kombucha company in their current industrial-suite home.

Though their tasting room is still a bit of a work-in-progress, the Talberts were eager to open after a longer-than-expected period waiting for the license approval needed to invite patrons to see what they’ve been working on for nearly two years. With an opening-day menu over 11 beers strong, it was clear how busy they’d been leading up to the impromptu debut.

“We still need to complete the patio area and the property is going to have the parking lot paved since it’s definitely a little rough now,” says Ryan. “But we had been targeting the date for the street festival as our ‘Super Bowl’ on our calendar, so we knew it was going to be a huge opportunity to debut ourselves to the San Marcos community.”

Hops play a major role in Ten-75’s mostly American lineup. Cascade and Centennial render No Street Shoes an unapolgetically old-school West Coast IPA, while Amarillo, El Dorado and Motueka lend Feazible IPA the tropical essence it boasts. El Dorado reappears with Idaho 7 and Simcoe for juicy IPA Uphill Squeegee, while, ironically enough, European Noble hops impart bitterness in an “American ale” dubbed Peachy Man Ale! The Talberts also have a hefeweizen, dunkelweizen, porter and 100% Azacca-hopped IPA fermenting away. Additionally, Ten-75 produces its own hard seltzer as well as a hop-infused, non-alcoholic soda called The Green Door,

Ten-75’s hours of operation are 3 to 8 p.m., Thursdays and Fridays, and noon to 8 p.m., Saturdays and Sundays. In addition to trying the company’s beers at the source, any of them can be ordered online.
